Tempt My Tummy Tuesday (Smores bars!)

I made these the other day because I thought the boys would love them, I try all the time to find foods that the two of them would like and would try. Well, I am thankful for my friend and her kids because my kids wouldn't even touch them, my boy's loss was her kid's gain! After dinner she allowed her kids to eat them!  I sent them home with her. I am trying so hard to be very good at what I eat and not do anything to mess up my blood sugar levels.  I worked my butt off getting my A1C from a 12 down to a 7.9 in two months.  This makes my love of baking a blessing for my friends that I hand things off to enjoy. When I am stressed or bored I like to bake, this does nothing for my figure or blood sugar.

Smores bars, (Picture credit is google search)
1/2 cup
butter, plus more for pan

(12-oz.) package mini marshmallows

7 c.
Golden Grahams or Cinnomon toast crunch cereal ( I perfer the CTC best)

Hershey's milk chocolate bars, broken into pieces (use kitchen scissors)

  1. Grease a 9"-x-13" pan with butter. In a large pot over medium-low heat, melt butter. Add all but 1 cup of mini marshmallows and stir until melted and smooth.  (I used a smaller size pan and it was awful!)
  2. Remove from heat and quickly stir in GG or CTC  until evenly coated. Press into pan and top with chocolate pieces and remaining 1 cup mini marshmallows.
  3. Heat broiler, and cook until marshmallows are toasted, about 2 minutes. ( This makes them extra yummy! I forgot the first time I made them)
  4. Let set at least 30 minutes before slicing.
